Ukrainian Borscht
Traditional Ukrainian beet soup with cabbage, potatoes, carrots, and onion — a hearty and colorful classic.
Ingredients
- Cabbage — 300g shredded
- Potato — 3 medium
- Carrot — 2 medium
- Onion — 1 large
- Tomato — 1 large
- Garlic — 3 cloves
- Sunflower oil — 2 tbsp
- Lemon — 1 tbsp juice
- Salt — to taste
- Black pepper — to taste
- Cream (Простонаше вершки 20%) — for serving(optional)
- Beet — 2 medium
Instructions

Bring 2 liters of water or broth to a boil.

Peel and dice potatoes, add to pot and boil for 10 minutes.

Grate carrots and beets separately.

Sauté onion, carrot, and tomato in sunflower oil for 5-7 minutes.

Add grated beet and a splash of lemon juice to keep color; cook 5 more minutes.

Add shredded cabbage to the pot.

Add the sautéed vegetable mixture, minced garlic, salt, and black pepper.
