- Potato — 4 medium
- Carrot — 2 medium
- Onion — 1 large
- Garlic — 4 cloves
- Sunflower oil — 3 tbsp
- Salt — to taste
- Black pepper — to taste
- Cherry plum tomatoes — 150g(optional)

Score the pork loin and rub with minced garlic, salt, black pepper and a drizzle of sunflower oil.

Peel and cut potatoes and carrots into large chunks. Slice onion into wedges.
