Potato and Carrot Soup with Pork Mince Meatballs
A warming Ukrainian-style soup with tender vegetable broth, soft potato and carrot, and mini pork-beef mince meatballs.
Ingredients
- Pork-beef mince Ukrainian — 300g
- White potatoes — 400g
- Carrot — 2 medium
- Onion — 1 medium
- Garlic — 2 cloves
- Oleyna sunflower oil — 2 tbsp
- DC rye crispbread — 4 pieces(optional)
- Salt — to taste
- Black pepper — to taste

Season pork-beef mince with salt, pepper and one finely minced garlic clove. Roll into small meatballs (about 2cm diameter).

Peel and dice potatoes and carrots. Finely chop onion.

Heat sunflower oil in a large pot, sauté onion and carrot for 5 minutes.

Add 1.5 liters of water and bring to boil.

Add potatoes and cook 10 minutes.

Gently drop meatballs into the soup and cook 15 minutes.

Season with salt and black pepper.

Serve hot with rye crispbread on the side.
